Magnetic Tongue Judges Tomatoes

Magnetic Tongue Scientists have used nuclear magnetic resonance spectroscopy (NMRS) in an experiment to create a ‘cyber-tongue’. The research was published in the italian Journal of Agricultural and Food Chemistry. The components of one foodstuff and records of people’s taste experiences were collated to correctly predict an individual’s probable response to previously untasted foodstuffs.

Current instruments are only capable of analyzing certain foods and require samples to be specially prepared. The team set out to develop a detailed program for the analysis of human sensual taste experience, and so used NMRS to analyse the physiological processes involved in tasting food. The results of NMRS forecasts correlated with human experience – or in layman’s terms, the equipment can predict human taste responses.
